Restaurant Manager – Fine Dining & Private Dining

About the role

We are seeking an experienced Restaurant Manager to lead the guest experience at The Falls Restaurant and its private dining rooms. You will be responsible for delivering exceptional service across breakfast, lunch, dinner, lounge, afternoon tea and room service, while upholding the highest standards of hygiene and operational excellence.

Key responsibilities

• Oversee all front‑of‑house operations in the restaurant, private dining rooms, WPCC dining and room service.
• Manage service staff and supervisors during service periods, ensuring seamless guest experiences.
• Maintain food safety and hygiene standards in all outlets.
• Control departmental budgets, monitor food and wine sales, and achieve financial targets.
• Lead staff induction, ongoing training, and development programmes.
• Handle stock management, inventory taking, and procurement of crockery, cutlery, linen and equipment.
• Drive a culture of knowledge sharing and passion for food and wine among the team.

Required profile

• Minimum 3 years experience in a similar restaurant management role.
• 3‑5 years fine‑dining managerial experience.
• Proven track record of leading F&B teams and delivering high‑quality service.
• Strong customer‑focused and people‑oriented mindset.
