Bar & Restaurant Manager – Food & Beverage

About the role

The Metropole Hotel in Cork is seeking a dynamic Bar & Restaurant Manager to lead its food and beverage outlets, including The MET, Tea Rooms, Hotel Lobby, Riverview Restaurant and Private Dining. The role combines operational oversight with team development to deliver memorable guest experiences.

Key responsibilities

• Conduct shift briefings, set upselling targets and communicate daily goals.
• Train, coach, motivate and, when necessary, discipline team members to uphold service standards and cultural values.
• Manage one‑to‑one and team communications, ensuring operational needs are met across all outlets.
• Record training assessments, schedule “one‑to‑ones” and monitor performance against mystery‑shopper criteria.
• Participate in cross‑departmental meetings to coordinate operations and maintain seamless service.
• Delegate duties, up‑skill staff and build a pipeline of future leaders.
• Foster a positive workplace culture through incentives, staff events and engagement platforms such as Workvivo.
• Maintain a visible floor presence, interact with guests, nurture regular clientele and drive loyalty.
• Monitor the condition of facilities and equipment, recommending improvements as required.
• Ensure appropriate staffing levels through recruitment and scheduling to guarantee smooth service.

Required profile

• Proven experience in managing bar and restaurant operations within a hotel or similar hospitality environment.
• Strong organisational abilities and meticulous attention to detail.
• Excellent communication and interpersonal skills, capable of leading diverse teams.
• Demonstrated commitment to service excellence and continuous improvement.
• Positive attitude with a focus on personal and team development.
