Sommelier – Luxury Resort Wine Service

About the role

Adare Manor is seeking a dedicated Sommelier to join the Carriage House team, part of the Food & Beverage department. Working closely with the Head Sommelier, you will help manage one of Ireland’s finest wine cellars and deliver exceptional wine experiences to guests.

Key responsibilities

• Provide warm, personalised wine service and guide guests through an extensive wine programme.
• Support cellar management, including stock control, organisation, and ordering.
• Assist in developing and updating wine lists and pairing recommendations.
• Deliver wine education and training to the wider Food & Beverage team.
• Maintain service standards that reflect Adare Manor’s reputation for excellence.

Required profile

• WSET/CMS Level 2 (or equivalent) certification.
• Minimum 2 years’ experience as a Sommelier in luxury hospitality.
• Strong knowledge of French and New World wines.
• Ability to perform under pressure in a dynamic service environment.
• Genuine passion for wine and exceptional guest service.
