Abattoir Production Manager

About the role

We are looking for an experienced Abattoir Production Manager to lead our meat processing facility in Ireland. The successful candidate will be responsible for overseeing all aspects of the abattoir, ensuring safety, quality and regulatory compliance while meeting production targets.

Key responsibilities

• Oversee daily abattoir operations, managing slaughter and processing schedules to maximise throughput.
• Monitor key performance indicators such as yield, downtime, efficiency and cost control.
• Ensure full compliance with Food Hygiene Regulations, Animal Welfare, Health & Safety legislation and DAFM/EU regulations.
• Maintain accurate records, audits and traceability documentation.
• Implement and maintain HACCP, GMP and other food safety systems.
• Lead corrective actions following audits, inspections or non‑conformances.
• Promote a strong food safety and quality culture across the site.
• Develop and manage supervisory and operational teams, identifying improvement opportunities.
• Support capital projects, equipment upgrades and process changes.

Required profile

• Proven experience managing abattoir or meat processing operations in a manufacturing environment.
• Strong leadership skills with the ability to motivate and develop diverse teams.
• In‑depth knowledge of food safety regulations, animal welfare standards and health & safety compliance.
• Demonstrated ability to manage production schedules, control costs and meet quality targets.
• Excellent communication and interpersonal skills.
