Assistant Head Sommelier

About the role

We are seeking a full‑time Assistant Head Sommelier to join our award‑winning team at the George V Restaurant, Ashford Castle. Working in a Forbes Five‑Star environment, you will help deliver exceptional wine service and support the renowned Wine Cellar.

Key responsibilities

• Assist the Head Sommelier in daily management of the Sommelier team.
• Prepare the George V Dining Room for wine service to the highest standard.
• Maintain accurate wine inventory and conduct monthly stocktakes.
• Provide knowledgeable, precise, and attentive wine service to every guest.
• Offer confident recommendations and respond promptly to guest requests.
• Lead the Sommelier team during service, providing guidance and training.

Required profile

• Minimum 2 years experience in a similar sommelier role.
• WSET Level 3 qualification (essential).
• Superior knowledge of wines, regions, and suppliers.
• Enthusiastic, adaptable, and flexible with working hours, including weekends and Bank Holidays.
• Excellent communication and interpersonal skills.
• Strong attention to detail and commitment to high standards.
• Legally eligible to work in Ireland.
• Ability to thrive in a fast‑paced environment and manage workload efficiently.

Required skills

• WSET Level 3 certification
