Director of Food & Beverage

About the role

The Grace Westport Estate is seeking a Director of Food & Beverage to lead all food and beverage operations across its new hotel on Ireland's Wild Atlantic Way. This senior position will shape the guest experience, drive revenue, and uphold the brand’s luxury standards.

Key responsibilities

• Provide strategic leadership for all F&B outlets, aligning with the hotel’s vision and brand identity.
• Oversee day‑to‑day performance of restaurants, bars, in‑room dining, banquet services and kitchens to ensure operational efficiency.
• Champion luxury service standards, monitor guest feedback and implement service enhancements.
• Develop and execute promotional strategies with Sales & Marketing, including seasonal offers and special events.
• Lead, mentor and develop the F&B leadership team, fostering a culture of accountability and high engagement.
• Manage scheduling, payroll forecasting and performance assessments to optimise resource allocation.
• Collaborate with the General Manager and department heads to drive revenue growth and cost efficiencies.
• Monitor purchasing activities and departmental expenditures, ensuring compliance with budgets and procurement procedures.

Required profile

• 5‑7 years progressive F&B experience, with at least 3 years in a senior leadership role.
• Background in luxury or full‑service hotel environments is preferred.
• Strong leadership, budgeting and communication abilities.
• Eligibility to work in Ireland.
