Restaurant Manager

About the role

The Falls Restaurant at Sheen Falls Lodge is seeking an experienced Restaurant Manager to lead the dining experience across the main restaurant, private dining rooms, breakfast, lounge, afternoon tea and room service. The role combines operational oversight with a passion for food, wine and hospitality, ensuring guests receive exceptional service in a 2‑Michelin‑Key hotel.

Key responsibilities

• Oversee all front‑of‑house operations in the restaurant, private dining, breakfast, lounge, afternoon tea and room service.
• Maintain the highest standards of service, hygiene and food safety.
• Manage staff scheduling, induction, training and ongoing development.
• Control inventory, stocktaking and procurement of crockery, cutlery, linen and equipment.
• Drive food and wine sales to meet the department’s financial budget.
• Collaborate with the kitchen and events teams to deliver seamless service for functions and WPCC dining.
• Monitor and improve service standards, guest feedback and operational procedures.

Required profile

• Minimum 3 years experience in a restaurant management role, preferably in fine‑dining environments.
• Proven ability to lead and develop a diverse team.
• Strong understanding of hygiene regulations and food‑service budgeting.
• Excellent customer‑focused attitude with a passion for food and wine.
