Pastry Chef

About the role

We are seeking an experienced Pastry Chef to join the camp kitchen at our Simberi Operation in Papua New Guinea. Reporting to the Head Chef, you will be responsible for producing high‑volume, quality baked goods and desserts for hundreds of workers on a fast‑paced, early‑morning roster.

Key responsibilities

• Assist in overseeing the camp kitchen and catering facilities.
• Supervise and train national and local staff on hygiene, food separation, and PPE use.
• Maintain camp infrastructure, including power, water, refrigeration, and air‑conditioning systems.
• Plan and rotate menus on a monthly cycle, ensuring healthy choices and consistent quality.
• Keep all kitchen, dining, and recreation areas clean and functional.
• Monitor refrigeration temperatures and conduct regular equipment cleaning.
• Manage waste disposal in accordance with safety standards.
• Coordinate stock ordering, usage, and rotation with the Camp Superintendent.
• Ensure compliance with company policies, values, and external regulations.

Required profile

• Advanced baking and pastry techniques with the ability to produce large volumes.
• Physical stamina for long, fast‑paced, early‑morning shifts.
• Experience supervising and training kitchen staff.
• Strong understanding of food safety, hygiene, and camp‑specific compliance.
