Restaurant Manager – Lobby Lounge & Whiskey Bar

About the role

The InterContinental Dublin is seeking a seasoned Restaurant Manager to lead the iconic Lobby Lounge, Whiskey Bar, Reading Room and all‑day dining operations, including the renowned Afternoon Tea service. This senior role reports to the Assistant Director of Food & Beverage and ultimately the Director of Food & Beverage.

Key responsibilities

• Oversee daily operations of the Lobby Lounge, Whiskey Bar, Reading Room and private dining, ensuring the highest standards of service and presentation.
• Manage a structured team of 2 Assistant Managers, 2 Supervisors and multiple Team Leaders, fostering clear communication, development and accountability.
• Maintain brand and service standards, handle guest feedback professionally and continuously exceed expectations.
• Control scheduling, payroll, inventory and quality assurance processes to ensure smooth, luxury‑focused operations.
• Collaborate closely with the Executive Chef on menu innovation, Afternoon Tea design, seasonal specials and whiskey pairings.
• Partner with the hotel’s marketing team to create promotions that highlight the unique identity of each outlet.
• Prepare regular reports for the Assistant F&B Director and Director of Food & Beverage, aligning with broader hotel objectives.
