Brewer – Craft Beer Production

About the role

Wicklow Wolf Brewing Company is expanding its craft beer operations and seeks an experienced Brewer to join a small, multi‑skilled team. The role involves overseeing the full brewing process from raw material handling to final packaging, while driving continuous improvement and ensuring product quality and safety.

Key responsibilities

• Operate and maintain a fully automated 35HL 4‑vessel Braukon brewhouse.
• Manage cellar operations including CIP, yeast handling, fermentation monitoring, dry hopping, centrifuge use and transfers.
• Perform all required quality control checks throughout production.
• Log data accurately and maintain comprehensive records.
• Run and monitor the 16‑head canning line, Framax bottling and kegging equipment as needed.
• Maintain a clean and safe working environment, adhering to health‑and‑safety standards.
• Communicate clearly with all brewery departments and external visitors.
• Adapt work schedules to meet production targets and business needs.

Required profile

• Minimum 1 + year experience as a Brewer in a fast‑moving production setting.
• Positive, team‑oriented attitude with flexibility for changing schedules.
• Ability to interact professionally with contractors, customers and visitors.
• Commitment to safety for self and colleagues.

Required skills

• Operation of Braukon brewhouse systems.
• Cellar management (CIP, yeast, fermentation, dry hopping).
• Quality control testing and data logging.
• Operation of 16‑head canning line and Framax bottling/kegging equipment.
• Forklift licence, working at height and manual handling competence.
• Mechanical/electrical engineering knowledge.
• Experience with automated brewing systems and process improvement.
• Recipe development and troubleshooting skills.
