Restaurant Manager – Luxury Hospitality Destination

About the role

We are seeking an experienced Restaurant Manager to lead the day‑to‑day operations of a luxury hospitality destination located in the heart of the Burren, County Clare. The role combines operational leadership with a strong focus on guest experience and wine programme development.

Key responsibilities

• Oversee all front‑of‑house activities, ensuring seamless service and operational excellence.
• Manage, train and develop the front‑of‑house team, fostering a high‑performance culture.
• Collaborate closely with the Head Chef and management team to align food and beverage offerings.
• Handle reservations, staffing schedules and guest relations.
• Support budgeting, stock control and financial performance monitoring.
• Develop and maintain the restaurant’s wine programme, including service, food pairing and inventory management.

Required profile

• Minimum three years’ experience in a Restaurant Manager or senior supervisory role.
• Strong wine knowledge and proven experience in wine service.
• Excellent leadership and communication abilities.
• Passion for delivering outstanding guest experiences.
• Desirable: WSET Level 2 or 3 and experience in luxury hotels, fine‑dining or Michelin‑recognised establishments.
