Bar Manager – Destination Bar, Restaurant & Cafe

About the role

We are seeking an enthusiastic Bar Manager to lead the vibrant Hyde & Jekyll bars within our 69‑bedroom hospitality venue in Galway City. You will shape the guest experience, drive a creative drinks programme and ensure the venue remains a top destination for locals and visitors alike.

Key responsibilities

• Own the guest experience across both bars, from gin collections to signature cocktails.
• Recruit, train and develop a high‑performing bar team, fostering a culture of pride and accountability.
• Maintain impeccable, relaxed service standards and oversee atmosphere elements such as lighting, music and table flow.
• Drive revenue through upselling, menu engineering, reservations management and events.
• Ensure compliance with health & safety, licensing, stock controls and cash procedures.
• Analyse performance metrics (covers, spend, feedback) to drive continuous improvement.
• Collaborate with marketing on promotions, events and social media to boost the venue’s profile.

Required profile

• A natural host who makes guests feel instantly at ease.
• Passionate about drink culture and current bar trends.
• Proven experience running busy, style‑driven bar operations, preferably in a city or destination setting.
